Roasted Chicken with Rosemary and Garlic Butter

  • Ingredients

    • 2 Double Breast Chicken on the frame with skin.
    • 80g rosemary and garlic butter (Recipe Here).

    Method

    • Using your hands separate the skin from the breast meat being careful not to tear the skin.
    • Place rosemary and garlic butter under the skin (between the breast meat and skin) covering the entire breast area.
    • Repeat with remaining butter and chicken breasts.
    • Secure skin at the front of the breast with toothpicks to prevent skin shrinking during roasting.
    • Lightly rub breasts with a little olive oil and seasoning.
    • Place chicken frames on baking trays, breast side up.
    • Roast at 160°C for about 20 minutes or until just cooked through (do not overcook).
    • Cool. Remove breast from frames, discard frames and toothpicks.
